This barrel shaped aged lactic style cheese contain a geotrichum rind with a lightly dusted maze of wrinkles. A cross section reveals a soft, outer cream layer which leads to a crumbly, tart core. Tasting notes feature green apple, yeast, & a hint of fruit blossoms.​
